This is a thouroughbred Yankee Pot Roast immersed in a gleaming brown sauce and rich earthy flavors of garden vegetables.

Ingredients
  • 1/2 lb salt pork or bacon fat
  • 1 4 or 6 lb bottom round roast
  • 2 med celery stalks
  • 2 med carrots
  • 1 small onion sliced
  • 1 1lb can tomatoes
  • 2 tsp salt
  • 6 peppercorns
  • 1 bay leaf
  • 3 cups water
  • 1/4 cup flour
  • 1/3 cup each string beans,cubed carrots,and cooked peas
  • 1/2 cup chopped cooked celery

Directions
  1. In a Dutch oven,brown roast in salt pork or bacon fat.
  2. Put celery,carrots,onion and tomatoes around meat
  3. Sprinkle Salt,peppercorns and bay leaf over roast:add water
  4. bring to a boil
  5. Cover and simmer over low heat or in a 350 oven 2 1/2 hours
  6. lift out roast....Keep warm
  7. Strain stock,putting vegetables aside.
  8. Skim fat off stock.returning 1/4 cup fat to dutch oven:Stir flour into fat.
  9. Add 4 cups stock cook and stir until thickened.
  10. Check seasonings.
  11. Add vegetables and heat.
  12. serve the gravy with beef slices
