  • 1 tsp olive oil
  • 4 boneless, skinless chicken breast halves (4 ounces)
  • 2 tomatoes, sliced
  • 1 clove garlic, minced
  • 2 tbsp red wine vinegar
  • 2 tbsp water
  • 2 tbsp minced fresh basil

Directions
  1. In a large no-stick frying pan over medium heat, warm the oil for 1 minute. Add the chicken and saute for 5 minutes per side. Remove to a plate.
  2. Add the tomatoes, garlic, and vinegar and water to the pan. Cover and cook for 5 minutes, or until the tomatoes are softened and have given up some of their juice. Add the chicken, cover, and cook for 5 minutes, or until the chicken is cooked through. Sprinkle with the basil.
  3. Cooking time: 20 minutes
  4. Per serving: 149 calories, 2.7 g. fat (17% of calories), 0.8 g. dietary fiber, 66 mg. cholesterol, 80 mg. sodium
