Rosemary Garlic Roasted Potatoes Recipe
This is a great versatile dish. Great with chicken, pork, beef.... great at breakfast. Leftovers can be refrigerated, reheated and used for breakfast tacos! Oh, so good!

Ingredients
  • 2 pounds red potatoes, unpeeled, cut into 1-1/2 inch cubes
  • 5 garlic cloves, sliced lengthwise in half
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary leaves, chopped
  • 1 teaspoon Kosher salt
  • 1 teaspoon pepper

Directions
  1. Preheat oven to 400 degrees.
  2. Mix together all ingredients and toss until potatoes are coated.
  3. Spread on cookie sheet in single layer.
  4. Bake for 25 to 30 minutes.
  5. Note: Garlic should be sliced not chopped. This prevents burning of the garlic

I use this side dish quite a bit in the colder weather. It's also really good with yams, or mixed red potatoes and yams.


Having these AGAIN tomorrow... So easy... and so tasty.. Hubby asked for them... A keeper.
