Rosemary Garlic Roasted Potatoes

- 2 pounds red potatoes, unpeeled, cut into 1-1/2 inch cubes shopping list
- 5 garlic cloves, sliced lengthwise in half shopping list
- 1/4 cup olive oil shopping list
- 2 tablespoons fresh rosemary leaves, chopped shopping list
- 1 teaspoon kosher salt shopping list
- 1 teaspoon pepper shopping list
How to make it
- Preheat oven to 400 degrees.
- Mix together all ingredients and toss until potatoes are coated.
- Spread on cookie sheet in single layer.
- Bake for 25 to 30 minutes.
- Note: Garlic should be sliced not chopped. This prevents burning of the garlic

I use this side dish quite a bit in the colder weather. It's also really good with yams, or mixed red potatoes and yams.
