Ingredients
  • 1 pound white onions sliced and separated into rings
  • 1-cup buttermilk
  • 1-tablespoon cornstarch
  • 2 egg whites
  • 1/2-teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup shredded sharp Cheddar cheese
  • Paprika

Directions
  1. Preheat oven to 350.
  2. In medium saucepan combine onions with water to cover then bring to boil and boil for 1 minute.
  3. Drain well then transfer to square baking dish sprayed with cooking spray.
  4. In bowl combine buttermilk and cornstarch and stir until cornstarch is completely dissolved.
  5. Mix in egg whites, salt and pepper then pour over onions.
  6. Sprinkle with cheese then paprika and bake for 25 minutes.

Now I have something to do with the buttermilk I have in my fridge..:) You can never have too many onions.
