Sliced potatoes baked in the oven or grilled in a foil pouch with onion, garlic and butter. This dish can be either summer or winter. It gets raves whenever we fix it and it is EASY. All the slicing can be eased by using a mandolin.

Got this recipe from a chef here in Louisville who was attending a Mother's Day dinner at my daughters. She had planned on scalloped potatoes, steaks & cooked asparagus. So naturally the power went out. We had a grill so he whipped up the Hobo Potatoes. Made a vinagrette to cold cook the asparagus and grilled the steaks. Lifesaver.

By the way, I don't usually rate my own recipes but this one has been around several years, has been prepared and offered to guests many times and has always been a hit. So if I seem a little smug... well ... yeah. And it's not really my recipe, I swiped it. :)

Would never ever make this dish again. It's like sucking oil and clarified butter right out of the bottle. Yuck! Suprisingly I was still able to taste the garlic flavor through all the grease. I like garlic.
Figure out a way to cut out 90% of the oil and butter.

Hmm.. well that is the first comment along those lines I've gotten. I've never had it be greasy at all. I acknowledge your comment and I am sorry it didn't work for you. My immediate guess is that the fire was not hot enough to carmelize all of the butter and oil. But that is just a guess. I truly do appreciate your review. Most people who don't like something will just slink away. Thanks for the heads up and I'll look at refining the cooking instructions.
