Pepper-crusted Steak With Worcestershire-butter Sauce Recipe

Ingredients
  • 4 strip steaks,about one inch thick
  • 1/2 cup of red wine
  • 1 TBS COARSELY ground pepper
  • 1 TBS peanut oil or vegetable oil
  • 1 shallot diced
  • 1/2 cup chicken broth
  • 1/4 cup Worcestershire sauce
  • 1 tsp fresh thyme
  • 2 TBS unsalted butter

Directions
  1. Pat steaks dry with paper towels and season with salt
  2. Rub one side of each steak with pepper
  3. Heat oil in large skillet over medium-high heat until just smoking
  4. Place steaks with peppered side down in skillet
  5. Cook until well browned on both sides 3 to 5 minutes
  6. Transfer to plate tent with foil
  7. Add shallot to empty skillet and cook until softened
  8. Add wine;broth;Worcestershire,and thyme
  9. Simmer scraping up brown bits;cook until reduced by half;about 5min
  10. Add accumulated steak juices back to pan,whisk in butter,and season with salt.Pour sauce over steaks.Serve
