Ingredients
  • 4 c. peaches, peeled and sliced
  • 1/4 t. almond extract
  • 2 T. water
  • 1 c. all-purpose flour
  • 1/2 c. sugar
  • 1/2 c. light brown sugar
  • 1/4 t. salt
  • 1/2 t. cinnamon
  • 1/2 c. unsalted butter
  • 1/4 c. unsalted butter (this is not a mis-print)
  • nutmeg

Directions
  1. Directions:
  2. *Oven 350 degrees F.
  3. *Combine peaches, almond extract and water. (If peaches aren't totally ripe, add a T. or 2 of white or brown sugar. )
  4. *Pour peaches into a 8 x 8-inch or similar sized pan.
  5. *Using a food processor (or a bowl and pastry cutter) combine flour, sugars, salt, cinnamon, and 1/2 c. butter; combine (or cut with pastry cutter) until mixture resembles coarse meal.
  6. *Sprinkle flour mixture over the top of the peaches in the pan, dot with butter pieces and sprinkle nutmeg lightly over the top to taste.
  7. *Bake *covered* at 350 degrees F. for 15 minutes, remove cover and continue to bake for 40-45 minutes.
  8. *Let crisp stand for about 15 minutes or so before serving. Not possible for me, even if I burn my fingers : D

Shandy, you're back!! Don't think I've seen you in awhile (I know you've had a busy summer) - so glad to see a post from you...and what a post! Decadent - just the way I like it. And our peaches are great right now - perfect...thanks!


This is actually your version of a peach cobbler and sounds wonderful. Anything that uses summer fruits is so appealing to me.
The apricot variation surely has to be a big hit, too.
I just may get crazy and go to the farmers market tomorrow for fruit and bake this.


PS -- try this with fresh whipped cream and go straight to your next size of clothing. Fattening but heavenly.


OH YEAH, BABY - I just made this today, and before the first hour of "cooling time" was up, John and I managed to "taste" it so much, I don't think there will be any left for dinner tonight! I liked the addition of the nutmeg on top - delicious. Thanks, Shandy!

Oh My made this for dessert tonight, wonderful, wonderful. This was soooooooo good! I processed it till it was large crumbs, when it baked it ended up looking like a cobbler topping. So tender and good, will do the same next time I make it also. All I can say is Wow, and thanks again for posting this. :)


I'm dissapointed. Went to the pantry for almond extract but alas it was not there, used rum extract instead. Hope it turns out alright. On the rack bubbling and cooling. Keep your fingers out!
