  • 5 tablespoons extra-virgin olive oil
  • 1 carrot, finely chopped
  • 1 celery rib, finely chopped
  • 1 garlic clove, minced
  • 1 large onion, finely chopped
  • Kosher salt and freshly ground white pepper
  • 1½ pounds ground lean turkey, white meat only
  • 2 large egg whites
  • ½ cup panko
  • ½ cup low-fat cottage cheese
  • 3 red bell peppers, sliced
  • 1 thyme sprig
  • ½ cup water
  • 1 tablespoon half-and-half
  • 1 yellow bell pepper, sliced

Directions
  1. Preheat oven to 400°.
  2. Lightly oil two 6-by-3½-inch metal loaf pans.
  3. In a large sauté pan, heat 2 tablespoons oil.
  4. Add carrot, celery, garlic, and two-thirds of the onion; season with salt and white pepper and cook over moderate heat, stirring, until softened, about 10 minutes.
  5. Allow to cool.
  6. In a large bowl, mix turkey, cooked vegetables, egg whites, panko, cottage cheese, 2 teaspoons salt, and ½ teaspoon white pepper.
  7. Knead until blended and divide between the pans.
  8. Place pans on a baking sheet and bake in upper third of the oven for 35 minutes or until an instant-read thermometer registers 150°.
  9. Remove from the oven and preheat broiler.
  10. While the meat loaves are baking, heat 2 tablespoons oil in a sauce pan.
  11. Add two-thirds of the red peppers, the remaining onion and the thyme.
  12. Cover and cook over moderate heat until softened, 10 minutes.
  13. Add water, cover and simmer until the peppers are very tender, 7 minutes.
  14. Discard thyme.
  15. Transfer contents of sauce pan to a blender, add half-and-half and purée.
  16. Season with salt and pepper.
  17. In a sauté pan, heat remaining 1 tablespoon oil.
  18. Add remaining peppers and cook over moderate heat until softened, 10 minutes.
  19. Season with salt and pepper.
  20. Broil meat loaves 4 inches from the heat until browned, 2 minutes.
  21. Turn the loaves out onto a plate and cut into ½-inch slices.
  22. Spoon the pepper sauce onto plates.
  23. Top with the meat loaf and peppers.
  24. Serve with wild rice and the remaining sauce.

You want to make sure you don't overbake the meatloaves; otherwise, they get a bit tough on the surface.
