Glazed Orange Roughy

- 4 orange roughy, flounder or red snapperfillets (1 Lb.) shopping list
- 1/4 cup apricot spreadable fruit or orange marmalade shopping list
- 2 tsp. stick margarine,melted shopping list
- 2 tsp. Dijon mustard shopping list
How to make it
- Place fillets on a ungreased shallow broiler/ baking pan
- Broil 4-6 inches from the heat for 5-6 minutes.
- Combine spreadable fruit, margarine and mustard
- Spoon over fillets.
- Broil 3-4 minutes longer or until fish flakes easily with fork
- ( Do not turn)

This was super-delicioso! Orange roughy is not as popular as it should be but people are coming around to it. We love it and new ways to prepare are always welcome. Thanks....oh that is my Pappa in my avatar..he is beautiful!

This was very good, but next time I will save 1/2 of the glaze to put on at the very end, because a lot of it ran off in the pan (and it was so good too) :)
