  • 4 orange roughy, flounder or red snapperfillets (1 Lb.)
  • 1/4 cup apricot spreadable fruit or orange marmalade
  • 2 tsp. stick margarine,melted
  • 2 tsp. Dijon mustard

Directions
  1. Place fillets on a ungreased shallow broiler/ baking pan
  2. Broil 4-6 inches from the heat for 5-6 minutes.
  3. Combine spreadable fruit, margarine and mustard
  4. Spoon over fillets.
  5. Broil 3-4 minutes longer or until fish flakes easily with fork
  6. ( Do not turn)

This was super-delicioso! Orange roughy is not as popular as it should be but people are coming around to it. We love it and new ways to prepare are always welcome. Thanks....oh that is my Pappa in my avatar..he is beautiful!

Seemed a strange combo, but it is surprisingly good. I used Polaner's sugar free apricot spread and a beer dijon mustard

Holy Moly! That was great and easy to prepare! Even my 5 year old loved it...and it's hard to get her to try different things...especially fish!


I think this is going to be a 10 in my house! thanks for the great recipe.


This was very good, but next time I will save 1/2 of the glaze to put on at the very end, because a lot of it ran off in the pan (and it was so good too) :)


My wife loved it, I'm not a big fish eater but was still surprised by its great taste

Alterations


I think if I were to try this recipe- I'd add some chili paste to the orange marmalade so the predominant flavor isn't sweet but rather a little spicey. Many people do not know that if your mouth is on fire from too much chili that you can put the fire out with something sweet.
