Parmesan Zucchini Spears Recipe

Ingredients

3 small zucchini(1lb.)

1 tsp.olive oil

1/2tsp.grated lemon peel

1/8tsp.salt

1/8tsp.pepper

1Tbl.grated Parmesan Cheese

Directions

Cut zucchini lengthwise into quarters,then cut in half crosswise.

In a large nonstick skillet,cook and stir zucchini in oil over medium heat for 4 mins.

Sprinkle with lemon peel,salt and pepper.

Cook and stir 4-5 minutes or longer or until zucchini is crisp-tender.

Remove form the heat;sprinkle with Parmesan Cheese.

Serve immediately.

Note*When I prepared it I also after the 4 mins.squeezed some of the fresh lemon juice over the zucchini,and covered it to help it steam and get done.Then removed the lid.(optional)

Also I preferred to put the olive oil over the zucchini in a bowl and mix it together and then put in the warmed pan.(optional)
