Parmesan Zucchini Spears

- 3 small zucchini(1lb.) shopping list
- 1 tsp.olive oil shopping list
- 1/2tsp.grated lemon peel shopping list
- 1/8tsp.salt shopping list
- 1/8tsp.pepper shopping list
- 1Tbl.grated parmesan cheese shopping list
How to make it
- Cut zucchini lengthwise into quarters,then cut in half crosswise.
- In a large nonstick skillet,cook and stir zucchini in oil over medium heat for 4 mins.
- Sprinkle with lemon peel,salt and pepper.
- Cook and stir 4-5 minutes or longer or until zucchini is crisp-tender.
- Remove form the heat;sprinkle with Parmesan Cheese.
- Serve immediately.
- Note*When I prepared it I also after the 4 mins.squeezed some of the fresh lemon juice over the zucchini,and covered it to help it steam and get done.Then removed the lid.(optional)
- Also I preferred to put the olive oil over the zucchini in a bowl and mix it together and then put in the warmed pan.(optional)
- We liked it.
