Ingredients

5 medium Vidalia onions, sliced

1 stick unsalted butter

Parmesan cheese

Ritz crackers, or other buttery crackers

Extra butter to "dot" the layers

Black pepper, paprika, if desired

Directions

Saute' onions in 1 stick butter until limp, but not brown

Remove from heat

Meanwhile crumble crackers (enough for in-between layers)

Place 1/2 onions in casserole

Sprinkle generously with grated Parmesan

Now sprinkle with some of the crumbled crackers

Dot with butter

Repeat layers

Bake uncovered, in a 350 degree oven for about 20 minutes or until light brown
