Ruben Dip Recipe
This is a dip from one of karen's family that lives in Canada... I have not made this..but Im going too as it sounds so delicious to me....If you like Ruben sandwiches... you would like this as well I think...

Ingredients
  • 1 pound corned beef, chopped (lunch sandwich style)
  • 1 small sourkraut (drained)
  • 8 oz cream cheese, softened
  • 1 cup mayonnaise
  • 1 pound swiss cheese shredded
  • 1/2 cup 1000 island dressing
  • 1 can water chestnuts, drained and chopped fine

Directions
  1. Combine all of the above ingredients.
  2. Stuff into a large pumpernickle loaf thats been hollowed out.
  3. Wrap well in foil and bake for 1 hour at 350 degrees.
  4. Cut the hollowed center pieces to bite size and serve on a large platter with the chuncks surrounding the stuffed pumpernickle loaf.
  5. You will probably need extra bread to go with this...

This sounds good, bet it would be good with rye bread pieces, especially if you might need extra bread to go with it. That would give you a bread choice for dipping. YUM


I make this all the time I melt the ingredients in the nicrowave and keep it in the crock pot to keep warm and serve it with cocktail rye bread.


I've never added the 1000 Island or water chestnuts to mine - that sounds delish...one of my favorite "party foods", but then, I could eat ruebens every day!
