Smotherd Chicken with Gravy

Ingredients
- 1 3lb fryer cut up
- Salt And Pepper to taste
- 1/2 cup vegetable oil
- 1/2 cup flour
- 1cup chopped onions
- 1cup chopped celery
- 3gloves garlic chopped
- 1/2chopped green onions
- ( Reserve tops to garnish)
- 1 small bell pepper
- 1 cup chopped muchrooms
- 1 quart water
Directions
- Cut fryer into seving pieces and season with creoke seasings or salt and Pepper set aside
- In a heavy pot make a roux using oil and flour stirring till brown
- add all seaonings except mushrooms
- Add chicken and stir well turning chicken till browned
- Cook for about 20 minutes
- Add water,mushrooms and green onion tops
- Cover and let simmer for approx one hour
- season to taste
- This may be served with any vegtable of choce
