Lime with Mint Cool Aid

- 8 limes (or enough to make just more than 1 cup juice) shopping list
- 3/4 cup granulated sugar shopping list
- Bunch fresh mint, some sprigs reserved for the pitcher later shopping list
- 5 cups water shopping list
- ice cubes shopping list
How to make it
- Remove the zest of 4 of the limes using a vegetable peeler and put this, along with the sugar, mint and 1 cup of the water, into a saucepan and bring to a boil, stirring to dissolve the sugar.
- Once it's started boiling, turn the heat down and let the liquid simmer in the pan for about 5 minutes.
- Take off the heat, let cool, and then strain into a pitcher.
- Squeeze the limes to make about 1 cup plus 2 tablespoons juice and then add, along with the rest of the water, to the jug of syrup.
- Add ice cubes and few sprigs of mint.
- Serve in a highball glass...:)
