A tasty way to prepare sea bass that involves poaching it and topping it with an olive-caper tomato sauce.

Ingredients
  • 1 medium onion, chopped
  • ½ red bell pepper, chopped
  • 1 cubanelle pepper, seeded and diced
  • 4 medium garlic cloves, minced
  • 2 cups canned diced tomatoes
  • ½ cup fish or vegetable broth
  • 2 tbsp sliced green olives
  • 2 tsp brined capers, drained
  • 1 ½ pound sea bass, quartered

Directions
  1. Sauté onion and peppers 7 minutes in a large non-stick pan.
  2. Add garlic and cook 1 minute more.
  3. Stir tomatoes, broth, olives and capers into onion mixture and heat to simmer.
  4. Arrange fish in skillet. Cover and cook 8 to 10 minutes.
  5. To serve, remove fish to plates and spoon tomato and olive mixture over fish.
