I make something very similar to this each Christmas eve. I pound the chicken breasts to an even thickness, layer with sliced deli ham and cooked frozen spinach (with some sauteed onion added). Roll up the chicken breasts and arrange in baking dish. Pour the sauce over and bake. Before serving, I sprikle the chicken with diced and seeded fresh tomato. Just a twist on your recipe. And gives you the colors of Christmas too!

The reason I said 2 hours is that Mom would put it in the oven on a lower setting then we would sit down and visit. I cook at a lower setting as never know when my husband will be getting home from work.
