How to make it

  • Steam the cauliflower for 10 minutes until very tender.
  • In a medium saucepan over medium heat, add the butter and garlic.
  • Once the garlic becomes fragrant, add the milk, red pepper, salt, pepper, tender cauliflower and mix until combined.
  • Mash with an immersion blender.
  • Enjoy!

    This was really good - just make sure you really steam the cauliflower good, and you really need the blender, the potato masher left it a bit lumpy.

    I love the stuff, but cauliflower was $400 per small head here last week! I have done this with frozen cauliflower though, and it's not bad!
