How to make it

  • Preheat oven to 350 degrees
  • Grate sweet potatoes, sprinkle with lemon juice, set aside
  • I mix this with a wire whisk....
  • Add all sugars to a large bowl
  • Add spices, mix
  • Then add melted butter, and mix
  • Add the beaten eggs to the mixture and stir
  • Add milk and mix
  • Add grated sweet potatoes
  • Stir gently to combine
  • Pour into lightly greased casserole dish.
  • Bake for 1 hour
  • NOTE: I have always wondered "why the powdered sugar", maybe the cook only had 2 cups granulated, 1/2 cup brown, and 1/2 powdered sugar. Or maybe she wanted to use 3 different kinds of sugar......interesting, I thought.

    I am from the Sweet Potato capital of the world. Vardaman, MS., but have never tried this. Sounds like it will be wonderful. Should be really good with the best potatoes anywhere.

    You can use a 9x13 casserole. Hope you enjoy it!!! It is mighty good.

    I love sweet potato pie..... but have never had sweet potato pudding... Will give this a whirl.. sounds really great..
