Southern Sweet Potato Pudding

- 4 cups grated, raw sweet potatoes shopping list
- lemon juice, freshly squeezed shopping list
- 2 cups granulated sugar shopping list
- 1/2 cup powdered sugar shopping list
- 1/2 brown sugar shopping list
- 1 stick butter melted shopping list
- 4 large eggs beaten shopping list
- 3 cups milk shopping list
- 1 teaspoon pure vanilla extract shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon nutmeg shopping list
- 1/2 teaspoon allspice shopping list
- 1/2 teaspoon cloves shopping list
How to make it
- Preheat oven to 350 degrees
- Grate sweet potatoes, sprinkle with lemon juice, set aside
- I mix this with a wire whisk....
- Add all sugars to a large bowl
- Add spices, mix
- Then add melted butter, and mix
- Add the beaten eggs to the mixture and stir
- Add milk and mix
- Add grated sweet potatoes
- Stir gently to combine
- Pour into lightly greased casserole dish.
- Bake for 1 hour
- NOTE: I have always wondered "why the powdered sugar", maybe the cook only had 2 cups granulated, 1/2 cup brown, and 1/2 powdered sugar. Or maybe she wanted to use 3 different kinds of sugar......interesting, I thought.
