This a great salad for summer... A different twist on it with the chili..

Ingredients
  • 2 cups diced chicken
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 pint cherry tomatoes, cut in half
  • 1/4 cup chopped red onions
  • shredded lettuce
  • 1 clove garlic, minced
  • 1 1/2 teaspoon chili powder
  • 1 large ripe avocado, peeled, pitted, cut into pieces
  • 1/2 cup sour cream

Directions
  1. In a large bowl, combine all ingredients except lettuce; toos gently.
  2. serve over lettuce.
  3. Regrigerate leftovers.
  4. You may omit the avocado if desired.

Oh yeah - a MUST TRY...you know I love most anything with sour cream (and I can never resist an avocado), and this sounds very tasty indeed. Another winner, Zen!
