How to make it

  • DIRECTIONS:
  • pour apricots into a deep bowl
  • pour orange juice over apricots
  • add preserves, sugar and curry powder...
  • stir gently and set aside
  • heat a large skillet over medium high heat and add oil
  • cook chops 3 min on each side no more than golden brown
  • season lightly w/ salt and black pepper
  • reduce to low
  • add apricots and juice mixture
  • cover and simmer for 5 min
  • remove from heat and sprinkle w/ green onions

    I made this last night and it was a hit! I had to sub in apple juice for orange juice since that is what I had on hand, but I don't think it made a big difference in the outcome.
