Breakfast To Go Peanut Butter Cookies Recipe
No, these aren't just an excuse to have cookies for breakfast! Okay, they could be. These are great to grab-and-get-going!!!

Ingredients
  • 1 cup crunchy peanut butter
  • 1 cup honey
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 cup oat bran
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Rice Krispies® cereal
  • 1 cup raisins

Directions
  1. Preheat oven to 350°.
  2. In a large bowl, combine peanut butter, honey, oil, vanilla and eggs.
  3. Blend well.
  4. Lightly spoon flour into a measuring cup and level off.
  5. Stir in flour, oat bran, baking soda, baking powder and salt.
  6. Blend well.
  7. Stir in Rice Krispies® and raisins.
  8. Drop by rounded tablespoonsful 3 inches apart onto an ungreased cookie sheet.
  9. Bake for 8-12 minutes or until golden brown.
  10. Cool 1 minute and remove from cookie sheets.
  11. Store in a tightly covered container when cool.

I LOVE cookies for breakfast...at least these have a lot of "good for you" ingredients, so I can justify my cookie breakfast!


I bet this would be superdelicious with some dried fruit added in... raisins or apples! I think I'll convince my husband we need to make these this week!
