Marinated Carrot Salad Recipe
This is a salad that I have made over the years and even the kids like it - just a little zing to the carrot

Ingredients
  • 1 lb. carrots
  • 1 oinion sliced
  • 1 green pepper sliced
  • 1/2 can (10 oz) tomato soup
  • 1/4 cup white sugar
  • 1/2 cup vegetable oil
  • 1/2 tsp. dry mustard
  • 1/3 cup vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions
  1. Cut carrots in 1/4" slices. Cook till just tender. Do not overcook. Drain
  2. Add sliced onions and peppers to carrots.
  3. Whisk the remaining ingredients together. Pour over vegetables.
  4. Let it sit in the fridge overnight.
  5. To Serve: Lift vegetables out of sauce. Left over sauce can be used again or as a salad dressing.

My recipe is like this but called Copper Pennies, it is really good. Haven't made it in a long time, actually forgot all about these. Now I must make them again :)

Yes copper pennies and aren't they great. Thanks I will be fixing these for Thanksgiving. It is a salad you can make several days ahead and it helps with the prep of Thanksgiving.
