Marinated Carrot Salad

- 1 lb. carrots shopping list
- 1 oinion sliced shopping list
- 1 green pepper sliced shopping list
- 1/2 can (10 oz) tomato soup shopping list
- 1/4 cup white sugar shopping list
- 1/2 cup vegetable oil shopping list
- 1/2 tsp. dry mustard shopping list
- 1/3 cup vinegar shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
How to make it
- Cut carrots in 1/4" slices. Cook till just tender. Do not overcook. Drain
- Add sliced onions and peppers to carrots.
- Whisk the remaining ingredients together. Pour over vegetables.
- Let it sit in the fridge overnight.
- To Serve: Lift vegetables out of sauce. Left over sauce can be used again or as a salad dressing.

My recipe is like this but called Copper Pennies, it is really good. Haven't made it in a long time, actually forgot all about these. Now I must make them again :)
