How to make it

  • Cut carrots in 1/4" slices. Cook till just tender. Do not overcook. Drain
  • Add sliced onions and peppers to carrots.
  • Whisk the remaining ingredients together. Pour over vegetables.
  • Let it sit in the fridge overnight.
  • To Serve: Lift vegetables out of sauce. Left over sauce can be used again or as a salad dressing.

    Yes copper pennies and aren't they great. Thanks I will be fixing these for Thanksgiving. It is a salad you can make several days ahead and it helps with the prep of Thanksgiving.
