How to make it

  • Preheat oven to 350.
  • Cut rhubarb in short pieces then sprinkle with sugar and add water.
  • Bake for on hour then put through sieve.
  • Heat puree again and pour over three beaten egg yolks.
  • When cold fold in 1/2 pint whipped cream and three beaten egg whites.
  • Add 1/4 cup orange juice and turn into refrigerator pan.
  • Stir at end of 1-1/2 hours.
  • Freeze for 3 hours.

    Being a midwesterner, I am certainly familiar with rhubarb - many family members still grow it in MN so I can usually get some in the late spring and early summer...love the stuff! This is a new way of preparing it for me, and I always love a NEW rhubarb recipe - thanks!

    I just put in some rhubarb plants this year so this will be something to look forward to.. Maybe I can find some in the freezer section..Hope so.

    I know. I grew up in Ohio and it was everywhere, I find it here in Texas occasionally in the freezer section, but I sure do miss the fresh stuff.

    Sounds wonderful, love rhubarb, but unfortunately you don't see much of it in the south. I miss the stuff, my parents you to grow it in Michigan.
