Dutch Speculaas Spice Cookies Recipe
These are nice little spicy squares that go great with a hot cup of coffee. I sometimes break them up and put them in fruit parfaits or in ice cream.

Ingredients
  • 3 c flour (all purpose)
  • 1 c granulated sugar
  • 1 c brown sugar
  • 1 tsp nutmeg
  • 1 tsp cloves (less if you prefer)
  • 1/2 tsp ginger
  • 1 tbsp cinnamon
  • 2 tsp allspice
  • 1 tsp baking soda
  • 2 eggs (+1 egg white for brushing on top)
  • 1 c butter
  • 1 1/2 c sliced natural almonds
  • raw sugar for sprinkling

Directions
  1. Beat butter for 30 seconds.
  2. Add both sugars, beat to combine.
  3. Add egs and blend.
  4. Combine all dry ingredients (except almonds and raw sugar) and add to butter mixture.
  5. Mix by hand ( I usually blend it all together with my hands--it seems to turn out best).
  6. Press into greased jelly roll pan (will be fairly thin).
  7. Brush egg white over top with pastry brush. Sprinkle almonds and press down slightly.
  8. Sprinkle raw sugar over all.
  9. Bake at 350 for about 25 minutes.
  10. Cool and cut into squares.
