Ingredients

How to make it

  • Preheat oven to 375. Grease an 8" square pan.
  • Beat egg replacer, banana and sugar in a large bowl.
  • In a saucepan, bring soy milk, brandy, and salt to a brisk simmer, remove from heat.
  • Gradually add soymilk to banana mixture.
  • Return everything to the saucepan, add corn meal and whisk until thickened and beginning to bubble.
  • Add figs and raisins to the batter and pour into the cake pan.
  • Bake 40 minutes.
  • Cool 20 minutes in the pan, then invert onto a plate.

    Make sure the polenta has thickened a fair bit before you bake it - the exact time will depend on the crnmeal you use.

    I made this the other day. Should it be firm all the way through after cooking? Mine wasn't.

    Had all the ingredients so made it and it is in the oven ....smells like heaven...substituted brandy flavoring for brandy.If my husband says "Is it done yet?" one more time! I told him he couldn't have any. I know we will love it and thanks or the post!

    Thanks! I'm always trying to make things that are delicious but also nutritious, so we don't have to feel AS guilty!! Go figure, I'm going to college for a pastry arts degree, that's when you'll see me bring on the butter (lol!).
