Thai coconut prawns

- 24 medium green prawns, peeled, tail intact, deveined shopping list
- 1/4 cup all purpose flour shopping list
- 2 eggs, beat lightly shopping list
- 1 1/2 cups shredded coconut shopping list
- 24 bamboo skewers, soaked for 25 minutes shopping list
- Dipping Sauce: shopping list
- 1/2 cup sweet chilli sauce shopping list
- 2 tablespoons lime juice (or lemon) shopping list
- 2 tablespoons finely chopped coriander shopping list
- 1. Line 2 baking trays with baking paper. Preheat oven 350 F. (180 C) shopping list
- 2. Thread each prawn lengthways onto skewers. Dust prawns in flour, shaking off excess. Dip into egg, then coat in coconut. shopping list
- 3. Place on prepared trays. Bake 15 - 20 minutes or until cooked. shopping list
- 4. DIPPING SAUCE: In a small jug, combine all ingredients and mix well. Serve with prawns. Enjoy. shopping list
