Caper Oil

- 1 3 ounce jar of capers in vinegar shopping list
- extra virgin olive oil shopping list
- (clove of garlic, peeled and crushed) my addition shopping list
- (pinch of red pepper flakes) my addition shopping list
How to make it
- Drain the vinegar from the capers.
- Put back in jar and cover with extra virgin olive oil (squeeze in the garlic clove and a pinch of red pepper flakes)
- Cover tightly and put in the refrigerator for two weeks.
- Use as a drizzle over plain baked fish or chicken breasts. Add the delicately seasoned capers to tuna salad or in a shrimp salad for extra punch. Sprinkle the capers over roasted red peppers, mozzarella and drizzle with a little sherry vinegar for an instant salad.
