How to make it

  • Drain the vinegar from the capers.
  • Put back in jar and cover with extra virgin olive oil (squeeze in the garlic clove and a pinch of red pepper flakes)
  • Cover tightly and put in the refrigerator for two weeks.
  • Use as a drizzle over plain baked fish or chicken breasts. Add the delicately seasoned capers to tuna salad or in a shrimp salad for extra punch. Sprinkle the capers over roasted red peppers, mozzarella and drizzle with a little sherry vinegar for an instant salad.

    OK, I'm buying a new jar of capers today and trying this - this sounds HEAVENLY, and I love your addition of garlic and red pepper flakes...this would really kick up some boring tuna salad!
