Idea from Fran McCullough, Living Low Carb. Fran credits this to Patricia Wells, the famous Paris-based food writer extraordinaire. I just know I love the caper oil drizzled on plain fish, or adding the capers to my tuna salad. Delicious.

Ingredients
  • 1 3 ounce jar of capers in vinegar
  • extra virgin olive oil
  • (clove of garlic, peeled and crushed) my addition
  • (pinch of red pepper flakes) my addition

Directions
  1. Drain the vinegar from the capers.
  2. Put back in jar and cover with extra virgin olive oil (squeeze in the garlic clove and a pinch of red pepper flakes)
  3. Cover tightly and put in the refrigerator for two weeks.
  4. Use as a drizzle over plain baked fish or chicken breasts. Add the delicately seasoned capers to tuna salad or in a shrimp salad for extra punch. Sprinkle the capers over roasted red peppers, mozzarella and drizzle with a little sherry vinegar for an instant salad.

OK, I'm buying a new jar of capers today and trying this - this sounds HEAVENLY, and I love your addition of garlic and red pepper flakes...this would really kick up some boring tuna salad!
