Not So Humble Hominy

- 2 cans yellow hominy shopping list
- 2 cans white hominy shopping list
- 4 tablespoons unsalted butter shopping list
- black pepper shopping list
- 1/2 cup fresh salsa Or your favorite salsa shopping list
- 1 can green chilies shopping list
- 1-1/2 cups sour cream shopping list
- 2 cups grated monterey jack cheese shopping list
- NOTE: May add fresh garlic, cilantro, 1/2 teaspoon cumin. or chopped jalapeno pepper. This dish lends itself to creativity, so be creative! shopping list
How to make it
- Drain all cans hominy
- In skillet, over medium heat, melt butter
- Add drained hominy, stirring around, until visibly "sizzling" and sizzle for a minute or so
- Sprinkle generously with black pepper or to your taste
- Remove from heat and place in casserole dish
- Add green chilies
- Dot with salsa
- May add garlic, cilantro, and/or cumin at this point
- Spoon sour cream evenly over the hominy
- Sprinkle grated Monterey Jack cheese over all
- Place in 350 degree oven for about 25 minutes or until cheese is melted and slightly browned.
- DELICIOUS and ENJOY!

I forgot to get back with you on this... Humble, I don't think so.. this is kick butt! I had to cut the recipe in half as there is just 2 of us.. I wish I had made the full thing... for left overs! Not a kernal was left!
