How to make it

  • Remove beet greens
  • wash beets thouroughly
  • place in boiling water that covers all beets by an inch
  • 1 tsp kosher salt in water
  • cook testing beets until fork tender but not mushy
  • remove with slotted spoon asnd place in ice water bath
  • slice onion thinly and cut circles in half
  • place in bowl with 2 to 3 tablespoon of oil
  • vinegar to taste
  • de-stem parsley add leaves
  • remove skins from beets
  • quarter and slice medium thin
  • add to salad and fold all ingredients
  • serve in clear glass bowl to show up colors
  • Good with all meat main dishes
