spinach and bacon stuffed mushrooms

- 225g bag of baby spinach shopping list
- 8 large flat mushrooms shopping list
- 2tbsp olive oil shopping list
- 5 rashers of bacon, chopped shopping list
- 2 garlic cloves, peeled and crushed shopping list
- 75g fresh white breadcrumbs shopping list
- 25g mature cheddar, grated shopping list
- 8 cherry tomatoes, halved shopping list
How to make it
- cook the spinach in a pan following the instructions on the packet.
- cool slightly then drain and squeeze out as much as possible.
- roughly chop the baby spinach.
- pre-heat the oven to gas mark 6, 200 degrees
- remove and chop the mushroom stalks, chop bacon and brown both in a panuntil crisp.
- add the garlic and breadcrumbs to cook,stirring for a few seconds and remove from heat.
- place the mushrooms on a large baking tray and season with salt and pepper.
- mix the spinach, cheese and cherry tomatoes with the bacon mixture and spoon on top of the mushrooms.
- bake for 20-25 mins until the mushrooms are tender and topping is browned.
