Use Shiner Bock, I love this beer for cooking-and drinking. I also added Red Potatoes and Broccoli- Tastes Great.

I just made this soup tonight. It is awsome! I added broccoli and taters to it. Put them in with the beer and stock befor the rue. The only suggestion I have is dont skinp on the salt and add garlic. Lots of garlic! Oh, and I used a can of Busweiser and a bottle of Linengkugels 1888 Bock(Darker beer made here in Wisconsin)

Oh man, I remember the first time I had Beer Cheese Soup...I thought I had died and gone to heaven! Your recipe sounds perfect, and I'll be topping it with lots of popcorn at serving (or is that just a MN thing?)!!
