Escarole And Beans

- 3 small heads or 2 large heads really fresh escarole shopping list
- 6 cloves finely sliced garlic shopping list
- 1 can straw mushrooms or shopping list
- any fresh mushrooms you prefer sliced shopping list
- 3 or 4 white onions sliced shopping list
- olive oil shopping list
- parmesan cheese shopping list
- 2 cans cannaloni beans shopping list
How to make it
- This dish should be prepared right before serving in a warmed serving bowl
- place 1 can of beans in food processor or mash with fork
- do not drain beans
- place all beans in a small bowl
- cut bottom off heads of escarole
- fill sink with cold water
- tear leaves off head and either cut or tear into smaller pieces
- place in cold water and swish around
- change water once and repeat; then place in colandar part of spaghetti pot to drain
- fill bottom of pot 3/4 full of salted water and....
- while waiting to boil...
- in fry pan coated with three turns of xtra virgin olive oil
- saute garlic mushrooms and onions slowly
- add beans to warm just before done
- put escarole in boiling water and do not overcook 6-8 minutes
- bring oven to 325
- place lightly oiled sliced bread on cookie sheet in oven after you sprinkle with grated cheese (5 minutes )
- remove from oven and turn oven off
- place a large bowl for warming in oven (2 minutes)
- remove and place drained escarole, garlic mixture in bowl
- fold gently to mix
- add oil to taste
- sprinkle cheese on top
- serve piping hot
