Escarole And Beans Recipe
A great veggie dish which can have sausage meat added if desired. Fresh baked Italian or French bread a must.

Ingredients
  • 3 small heads or 2 large heads really fresh escarole
  • 6 cloves finely sliced garlic
  • 1 can straw mushrooms or
  • any fresh mushrooms you prefer sliced
  • 3 or 4 white onions sliced
  • olive oil
  • parmesan cheese
  • 2 cans cannaloni beans

Directions
  1. This dish should be prepared right before serving in a warmed serving bowl
  2. place 1 can of beans in food processor or mash with fork
  3. do not drain beans
  4. place all beans in a small bowl
  5. cut bottom off heads of escarole
  6. fill sink with cold water
  7. tear leaves off head and either cut or tear into smaller pieces
  8. place in cold water and swish around
  9. change water once and repeat; then place in colandar part of spaghetti pot to drain
  10. fill bottom of pot 3/4 full of salted water and....
  11. while waiting to boil...
  12. in fry pan coated with three turns of xtra virgin olive oil
  13. saute garlic mushrooms and onions slowly
  14. add beans to warm just before done
  15. put escarole in boiling water and do not overcook 6-8 minutes
  16. bring oven to 325
  17. place lightly oiled sliced bread on cookie sheet in oven after you sprinkle with grated cheese (5 minutes )
  18. remove from oven and turn oven off
  19. place a large bowl for warming in oven (2 minutes)
  20. remove and place drained escarole, garlic mixture in bowl
  21. fold gently to mix
  22. add oil to taste
  23. sprinkle cheese on top
  24. serve piping hot
