Shredded Cabbage With Bacon And Onions Recipe

wonderful hearty accompaniment to pork or corned beef or really anything

Ingredients
- 1 head of cabbage outside leaves removed
- 1 sweet onion chopped
- 1 pound bacon
- kosher salt black pepper to taste
- 2 large garlic cloves minced
Directions
- cut cabbage in half and cook in rapidly boiling water for 5 minutes
- remove and cool in ice bath if possible
- slice onions in strips
- cut bacon in 1/2 to 1 inch pieces
- slice cabbage in strips
- heat wok or fry pan
- add bacon until almost crisp\
- add onion , garlic and cabbage
- cook on high stirring almost constantly
- serve hot on platter...garnish with cherry tomtoes cooked for a minute in same pot to get the flavor but should look bright and fresh
