Seared Beef Carpaccio With Spicy Mint Dressing Recipe
An excellent starter for the important dinner party. Beef fillet should always be served this way.

Ingredients
  • 1 x 2o0g (7oz) beef fillet
  • 20ml (2tbsp) soy sauce
  • FOR THE SPICY MINT DRESSING
  • 1 x birds-eye chilli
  • 60g (3tbsp) garlic, chopped
  • 5 x (3 sprigs) mint
  • 80ml (4 tbsp) lime juice
  • 30ml (3tbsp) soy sauce
  • 80g (4tbsp) honey
  • half handful salad leaves, such as rocket

Directions
  1. Marinate the beef in the soy sauce for 10 minutes. Sear the beef fillet (using no oil). Roll the seared beef in clingfilm and put in the freezer until it becomes hard.
  2. thinly slice the beef. Arrange the prepared beef on to serving plate as desired, then set aside.
  3. With a mortar and pestle, pound the chilli, garlic and mint until it makes a paste. Put the paste in to a small bowl and add the lime juice, soy sauce and honey and mix well. On a serving plate, place the prepared beef fillet in the centre.
  4. Pour over dressing, garnish with salad leaves ans serve.
