Hot Pepper Cheese and Bacon Omelet - Tried and True

- 4 eggs shopping list
- 1/2 cup bacon diced shopping list
- 1/2 cup red onion diced shopping list
- 1 tablespoon butter shopping list
- 12 fresh tarragon leaves finely chopped shopping list
- 2 ounces hot pepper cheese sliced or crumbled shopping list
- 1/2 teaspoon se salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/4 teaspoon garlic powder shopping list
How to make it
- Cook bacon in a non stick skillet.
- Add half the onions when the bacon is about 3/4 done.
- Continue cooking until onions are translucent.
- Drain by putting bacon and onions on paper towels in a plate.
- In a bowl beat eggs, sea salt, black pepper, garlic powder and tarragon together.
- Wipe skillet clean of bacon drippings.
- Add butter to skillet and melt.
- Return cooked bacon and onions to skillet set at medium low heat.
- Add remaining onion to skillet and cook 2 minutes.
- Add egg mixture to skillet and cook eggs until almost set.
- Add hot pepper cheese to half the omelet and fold over.
- Cook another 4 minutes.
