How to make it

  • Cook bacon in a non stick skillet.
  • Add half the onions when the bacon is about 3/4 done.
  • Continue cooking until onions are translucent.
  • Drain by putting bacon and onions on paper towels in a plate.
  • In a bowl beat eggs, sea salt, black pepper, garlic powder and tarragon together.
  • Wipe skillet clean of bacon drippings.
  • Add butter to skillet and melt.
  • Return cooked bacon and onions to skillet set at medium low heat.
  • Add remaining onion to skillet and cook 2 minutes.
  • Add egg mixture to skillet and cook eggs until almost set.
  • Add hot pepper cheese to half the omelet and fold over.
  • Cook another 4 minutes.

    I've made hot pepper omelets before but nothing like this. The bacon sounds great, and the addition of tarragon I bet really kicks up the flavor. Thanks Meow. MJ
