Santa Fe Spoon Bread Recipe
SO EASY! A great dish to serve with pork, chicken, brisket. Add a salad and you have a meal! Its a ONE-BOWL-ER!! It is spooned from the pans on plates. If you like cornbread and corn, you will love this!!

Ingredients
  • 1-17 ounce can cream-style corn
  • 3/4 cup milk
  • 1/3 cup melted shortening (I use Crisco)
  • 1-1/2 cups white corn meal
  • 2 eggs slightly beaten
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 4-ounce can chopped green chiles
  • 1-1/2 cups grated Monterey Jack cheese

Directions
  1. Preheat oven to 375 degrees
  2. In large bowl, combine all ingredients, except cheese and chiles
  3. Mix thoroughly
  4. Pour 1/2 batter into greased a 9-inch square pan
  5. Sprinkle half the cheese and half the chiles onto the batter
  6. Add remaining batter and top with remaining chiles and cheese.
  7. Bake for 45 minutes, until firm around the edges and slightly soft in the center
  8. Spoon from pan onto plates

I've made a similar recipe, but using a cornbread mix, and it is fabulous. I can't wait to try this recipe because it's bound to be even better!!!!


This sounds really good....I had something simular at Disneys Crystal Palace rest. but it had bacon in it and it was soooo yummy...oh and some onions too....Thanks
