Kozy Shack Rice Pudding Recipe


KOZY SHACK RICE PUDDING Recipe
I don't know that this is their exact recipe, but it sure tastes just like it. It is actually a recipe from a restaurant in Brooklyn called Juniors. Enjoy!

Ingredients
  • 2 cups of water
  • 1/2 tsp salt
  • 1 cup uncooked regular white rice, medium grain (not parboiled)
  • 4 cups heavy cream
  • 5 extra-large eggs
  • 1 cup sugar
  • 1 tbl. pure vanilla extract

Directions
  1. Bring the water and salt to a boil in a large saucepan over high heat. Stir in the rice and return to a boil. Cover the pot, reduce the heat to low, and cook until all of the water is absorbed, about 20 minutes. Check the pot occasionally and stir to prevent the rice from sticking.
  2. Slowly stir 3 1/2 cups of the cream into the rice and stir gently over low heat until the cream is incorporated (make sure it does not boil). Remove the pan from the heat.
  3. Whip the eggs and sugar with an electric mixer on high until light yellow and thick. Beat a little hot cream into the eggs, then stir this egg mixture into the rice until it's blended throughout.
  4. Return the pudding to the heat and stir gently until it has thickened. It's very important not to let the mixture boil at this stage, as excess heat can curdle the eggs.
  5. Remove the pudding from the heat and immediately stir in the remaining 1/2 cup of cream and the vanilla. Transfer the pudding to a heatproof bowl and let it cool at room temperature for 30 minutes. Lay a piece of plastic wrap directly on the surface (this prevents a skin from forming on top) and refrigerate the pudding until it's cold. Store any leftovers in the refrigerator.

Yes I think raisins are good in Rice Pudding, but Kozy Shack Rice Pudding normally doesn't have them in it, at least what you can buy in the grocery stores doesn't. Hope you all enjoy this recipe.

Anything from Juniors is sure to be a hit!!! I LOVE THEIR CHEESECAKE! Yumm.. cant wait to try this!


I made this recipe and it is wonderful! A bit time-consuming with the low heat cooking, but I was able to leave it on a very low setting and not have to stir it constantly, and it did not stick to the pot at all. Everyone that tasted the pudding said it was absolutely delicious! I did add about 2/3 cup of steamed golden raisins at the end of the cooking process. If you like raisins in your pudding, these were a great addition, nice and plump from the steaming. Depending on your preference, you could also sprinkle some cinnamon on the pudding. This is a great dessert if you are having company for dinner, as it makes a quite a large bowl and will serve many guests. I really think it tastes much better than Kozy Shack, as it is definitely not a low-fat recipe!


I live in california and kozy has a raisin/cinnamon rice pudding that is awesome, will try your receipe with these added, hope it's close, i'm addicted to kozy....thanks!
