Hashbrown Breakfast Casserole Recipe
I prepare this when company comes. It is a meal all by itself. All I add are homemade biscuits.

Ingredients
  • 1/2 lb bacon
  • 1 large bag frozen cubed hashbrowns
  • 9 slices of American sliced cheese
  • 9 eggs
  • Optional: chopped onions, bell pepper

Directions
  1. In electric skillet fry bacon until crisp.
  2. Remove bacon but save bacon drippings.
  3. Brown frozen hashbrowns in bacon drippings until done.
  4. Add crumbled drained bacon to hashbrowns.
  5. Make a dent with spoon on top of hashbrowns and place slices of cheese.
  6. Place an egg on top of each cheese slice. The dent keeps the egg in center.
  7. Cover and cook on low heat until eggs are steamed and firm. Onions and peppers may be added when cooking hashbrowns.

This is a really great idea. I haven't used my electric skillet in a long long time because it is so big and hard to clean but being able to cook a whole breakfast in it would be worth it. :o)
