How to make it

  • Heat skillet or griddle with oil or butter (add more oil for fritters, less for pancakes)
  • In large bowl, mix flour, baking powder, and salt.
  • Open can of corn (creamed corn can work too) and reserve liquid
  • Beat egg and milk/reserved corn liquid together.
  • Add egg mixture to flour mixture and stir.
  • Use a ladle to drop batter on hot griddle.
  • When bubbles form along the sides, flip.
  • Remove from heat, serve with syrup.
