How to make it
- Heat skillet or griddle with oil or butter (add more oil for fritters, less for pancakes)
- In large bowl, mix flour, baking powder, and salt.
- Open can of corn (creamed corn can work too) and reserve liquid
- Beat egg and milk/reserved corn liquid together.
- Add egg mixture to flour mixture and stir.
- Use a ladle to drop batter on hot griddle.
- When bubbles form along the sides, flip.
- Remove from heat, serve with syrup.
