Cabbage Skillet Recipe
We love cabbage rolls in our house however often do not have the time for the fussier true cabbage rolls this is the answer for those times when time is in short supply.

Ingredients
  • 1/2 cup uncooked instant rice
  • 1/2 cup water
  • 1 pound extra lean ground beef
  • 1/2 cup finely chopped celery
  • 1/4 cup chopped onion
  • 1 teaspoon seasoned salt
  • 2 eggs well beaten
  • 1 16 oz package coleslaw blend
  • 2 8oz cans tomatoe sauce
  • 1/2 cup packed brown sugar
  • 6 tablespoon cider vinegar

Directions
  1. cook rice as directed on package in the 1/2 cup of water
  2. combine cooked rice, beef,celery,onion,salt, and eggs mix well
  3. Spray a 12 inch nonstick skillet with non stick cooking spray
  4. place 3 cups of the coleslaw mix evenly in the bottom of the skillet
  5. spoon beef mix over the coleslaw pressing down lightly
  6. top with remaining coleslaw blend
  7. combine the tomatoe sauce, brown sugar, and vinegar mixing well
  8. pour tomatoe mixture over mixture in skillet
  9. cover and cook over medium high heat 12 minutes
  10. uncover reduce heat to medium low cook 12 to 15 minutes longer until beef mixture is thoroughtly cooked
  11. remove from heat with lid partially on the skillet drain of excess liquid or use a turkey baster to remove excess liquid.
  12. cut into wedges and serve.
