How to make it

  • cook rice as directed on package in the 1/2 cup of water
  • combine cooked rice, beef,celery,onion,salt, and eggs mix well
  • Spray a 12 inch nonstick skillet with non stick cooking spray
  • place 3 cups of the coleslaw mix evenly in the bottom of the skillet
  • spoon beef mix over the coleslaw pressing down lightly
  • top with remaining coleslaw blend
  • combine the tomatoe sauce, brown sugar, and vinegar mixing well
  • pour tomatoe mixture over mixture in skillet
  • cover and cook over medium high heat 12 minutes
  • uncover reduce heat to medium low cook 12 to 15 minutes longer until beef mixture is thoroughtly cooked
  • remove from heat with lid partially on the skillet drain of excess liquid or use a turkey baster to remove excess liquid.
  • cut into wedges and serve.
