Easy to prepare and very tasty. A fairly healthy and purely decadent meal when served over brown rice and broccoli!

I do love my crockpot, but do not think chicken breasts come out great in them (too dry and overcooked because they are low in fat).
BSCB= Boneless Skinless Chicken Breast
I thought this recipe looked great, so I made the following alterations in order to cook it in the oven. It is cooking, now-- hope it works!
-Browned ½ chicken breasts over high in olive oil for about 4 minutes a side
-Seasoned BSCB with salt in pepper while they were cooking
-Sautéed one chopped yellow onion in oil after the BSCB
-Mixed the sauce (minus the cornstarch) with one cup of brown rice, also added chopped pineapple and a dash of sesame oil
-Placed the brown rice mixture in a baking pan, topped with BSCB and onion and cooked for about 45 minutes on 375 degrees.
Note- I know there are concerns with the sugars burning in the oven, but so far so good!

Ooh, that's a GREAT idea! I'm gonna try it your way too... that crockpot is so heavy!

This grocery store here does not have fresh ginger root. Will ground ginger work? If so, how much?
Sounds scrumptious!

You can use dried, use 1/2-3/4 the amount of fresh and just make sure to blend it into the sauce well... it tends to clump. Enjoy!
