Vermicelli With Anchovies Recipe
Another one I have not tried. It comes from an estate sale. Hope you enjoy.

Ingredients
  • 8 cloves fresh garlic peeled
  • 3/4 cup olive oil heated
  • 2 ounce can flat filets of anchovies
  • 1 pound vermicelli
  • 1 tablespoon sweet crushed red pepper
  • 1/2 cup grated parmesan cheese

Directions
  1. Fry garlic in heated oil about three minutes then discard garlic.
  2. Dice anchovies and add anchovies with oil to hot oil.
  3. Cook for two minutes stirring constantly then set aside.
  4. Cook vermicelli according to package directions then drain well.
  5. Arrange on platter or in bowl.
  6. Pour the garlic and anchovy mixture over the vermicelli and toss lightly.
  7. Sprinkle with sweet crushed pepper and parmesan cheese.
  8. Serve immediately.

Oh, honey, this is what I fix when I'm too tired to cook. The whole family will eat it, even the ones who swear they won't eat anchovies. Love this prep. It is really good. It isn't fishy at all.
