Ingredients

How to make it

  • Grate zucchini very finely and pour off the juice.
  • In a bowl combine together flour, zucchini, salt and beaten egg.
  • Make patties from this mixture then roll in bread crumbs coating completely.
  • Add oil to skillet then heat over medium heat.
  • Rotate skillet to coat with oil.
  • Add patties and place over medium high heat.
  • Fry patties 6 minutes per side.
  • Serve with a dollop of sour cream over each patty.

    Delicious way to use up the last of the zucchini in the garden.
    I used rice flour in place of the bread crumbs and they are very tasty I put my tomatoe sauce over the zucchini but no cheese.

    So yummy and quick to make! Well I did use the grater on my KA which did make the grating part fast and easy :) I added a little garlic powder and black pepper to the patty mix. I made mine pretty small, so they were kind of mini. Did mozz and spaghetti sauce too and it was delicious! Thanks!

    Thankyou for a new way to use the zuccini from our garden!We LOVE it fried in Panco oR breadcrumbs in canola oil till brown and crispy and well-drained,but will try your way as well.

    Oh, I can already taste this! As soon as I get some fresh zucchini from a local farmer, I'm going to have to make this as a little treat for myself! Okay, maybe I'll share too!

    Oh yum! This looks similar to the recipe I use, except I don't use a coating. And I love eating these patties with sour cream on the side. If you want it to be even healthier, try Russian/Polish style plain yogurt.
