Ingredients
  • 7 cups peeled grated drained zucchini
  • 1/2 cup flour
  • 1/2 cup bread crumbs
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 7 teaspoons olive oil
  • Sour cream

Directions
  1. Grate zucchini very finely and pour off the juice.
  2. In a bowl combine together flour, zucchini, salt and beaten egg.
  3. Make patties from this mixture then roll in bread crumbs coating completely.
  4. Add oil to skillet then heat over medium heat.
  5. Rotate skillet to coat with oil.
  6. Add patties and place over medium high heat.
  7. Fry patties 6 minutes per side.
  8. Serve with a dollop of sour cream over each patty.

Oh yum! This looks similar to the recipe I use, except I don't use a coating. And I love eating these patties with sour cream on the side. If you want it to be even healthier, try Russian/Polish style plain yogurt.


It is close to a recipe that I have. I never thought of tomatoe sauce on it. Next time I will make that extra step. Thanks!


Oh, I can already taste this! As soon as I get some fresh zucchini from a local farmer, I'm going to have to make this as a little treat for myself! Okay, maybe I'll share too!

Thankyou for a new way to use the zuccini from our garden!We LOVE it fried in Panco oR breadcrumbs in canola oil till brown and crispy and well-drained,but will try your way as well.

Alterations


Squeeze out the zucchini juices so that it's as dry as possible before mixing with the rest of the ingredients. You can try skipping the breadcrumbs altogether, which will give you a softer patty.
