How to make it

  • Mix together the whole wheat flour, gluten flour, yeast and hot water. Hint: ( the hot water in this recipe will not kill your yeast)
  • Mix for 1-2 min. Cover and let stand for 10 min.
  • Add salt, oil, honey, or suar and bottled lemon juice.
  • Mix 1 min.
  • Then add up to 5 c more flour (I only add 4)
  • Knead for 10 min.
  • Preheat oven to warm.
  • Turn dough out onto oiled counter top and shape in to 4 loaves.
  • Put into oiled bread pans.
  • Place in preheated oven and let rise until dough is even with top of pan.
  • Bake at 350 for 30 min.

    I also grind my own flour - and this recipe is perfect to make wholesome loaves from the resulting flour. (For those that haven't heard of the modern type of kitchen flour mills you should see just how fine the flour can be ground) I particularly like the one rise method of this recipe - which I find works better with whole wheat breads, and as you no doubt know Naomi baking bread is one of the hardest baking tasks - everything needs to be perfect (unless you are a bricklayer and need to create a brick rather than a bread out of your ingredients). Thanks for this great post! :D
