Easy, and good for showing off. Just mention that you're making ricotta cheese pancakes rather than regular pancakes and everyone at the breakfast table will think you're a culinary god. These pancakes are much like crepes, light, and perfect with berry preserves.

- 1 tsp baking powder
- 3 eggs
- 2 Tbsp melted butter
- 2 tsp sugar
- 1/2 c sifted flour
- 2/3 c milk

Ingredients

How to make it

Combine ingredients and blend until smooth
Cook on a greased, preheated grill in 2" rounds
Serve hot, topped with powdered sugar
