Pumpkin Cookies Recipe

Ingredients

2 c. brown sugar

2 c. canned pumpkin

1 c. oil

2 tsp. vanilla extract

4 c. flour (I use half white & half whole wheat)

2 tsp. baking soda

2 tsp. baking powder

1 tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

2 c. raisins (I prefer golden raisins)

Directions

Preheat oven to 350. Beat together sugar, pumpkin, oil, and vanilla. Add the rest of the ingredients, except the raisinsd, & blend well. Stir in raisins. Drop by spoonsfuls onto greased cookie sheet or parchment paper. Bake at 350 for 12-15 minutes. Makes about 7 dozen.

The cookies are soft and somewhat cake-like. They don't flatten out like other cookies - they kind of stay like little round cakes.

I had to substitute almond extract for vanilla extract and only had 1 1/2 cups pumpkin but everyone loved them
