Ingredients
  • 1 head of garlic (finely chopped)
  • 2 cups red chili beans (small red)
  • 1½ TVP (Textured Vegetable Protein)
  • 1½ cups hot water
  • 1 15 ounce can diced tomatoes
  • 1 large onion (chopped)
  • 2 carrots (shredded)
  • 3-4 tablespoons cumin
  • 3 chipotle peppers
  • salt and pepper
  • 1 teaspoon lemon
  • Non-dairy sour cream for topping or regular sour cream
  • Non-dairy cheese for topping or regular cheese

Directions
  1. Place beans in bowl cover with water and soak 4 hours.
  2. Rinse soaked beans and transfer to large saucepan add finely chopped garlic and fill pot with enough water to cover beans by at least 2 inches.
  3. Bring water to boil, lower heat to gentle simmer (cooking beans with minimal agitation)
  4. While red chili beans are simmering
  5. Re-hydrate chipotle peppers in 1½ cups hot water for 20 minutes remove peppers from water, retain chipotle soaking water,
  6. Bring retained chipotle soaking water to boil.
  7. In a large bowl combine the TVP, chipotle water and stir Let stand until TVP absorbs all the chipotle water.
  8. Finely chop chipotle peppers
  9. After beans have simmered 1 hour add onions, shredded carrots, chipotle peppers, tomatoes TVP cumin simmer for another 20 minutes stirring occasionally.
  10. Add salt and pepper to taste
  11. Add lemon juice stir.
  12. Serve in bowls top with sour cream and cheese
