Gourmet Spinach Soup

- 5 tablespoons butter shopping list
- 4 ounces fresh mushrooms, diced shopping list
- 1 green onion (including top), thinly sliced (I use more) shopping list
- 5 tablespoons all-purpose flour shopping list
- 2 cups chicken stock or broth shopping list
- 2 cups milk shopping list
- 1/2 teaspoon salt shopping list
- ground black pepper to taste shopping list
- 4 ounces cream cheese, cut into cubes shopping list
- 1 cup swiss cheese, shredded shopping list
- 1 (12 ounce) bag spinach, coarsely chopped (stems removed) shopping list
How to make it
- In large saucepan, melt butter.
- Add mushrooms and green onion. Saute until mushrooms are softened.
- Whisk in flour and cook until bubbly. Cook 1 minute.
- Whisk in chicken stock.
- Whisk in milk.
- Cook over medium heat until thickened.
- Season with salt and pepper
- Add cream cheese cubes and Swiss cheese. Stir until cheeses are melted.
- Add spinach in batches, stirring until spinach is wilted.
- Ladle into bowls and enjoy!
