Eggs in a Curry

- 8 hard boiled eggs shopping list
- 2 onions, minced shopping list
- 2 T. butter or margarine shopping list
- 2 1/2 tsp. salt shopping list
- 1 tsp. ground turmeric shopping list
- 1 tsp. curry powder shopping list
- 1 16 oz can whole tomatoes shopping list
- 1/4 c. buttermilk shopping list
- Hot cooked rice(instant is easier) shopping list
How to make it
- Peel and cut eggs in halves
- Cook onions in butter
- Add salt and spices, stir well
- Add tomatoes and buttermilk
- Simmer 3-5 minutes
- Add the eggs and spoon onion/ tomato mixture over them
- Simmer an additional 10 minutes
- Serve with hot rice
