This is considered a Passover kugel but it is great any time of year.

Ingredients
  • 1 cup hot water
  • 1 cup matzo farfel
  • 1/2 cup white sugar
  • 2 large apples - peeled, cored and shredded
  • 2 teaspoons ground cinnamon
  • 3 egg whites, stiffly beaten
  • Note: I usually use 2 cups hot water and 2 cups matzo farfel

Directions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Spray an 8 x 8 inch baking dish with non-stick cooking spray.
  3. In a large bowl, combine the water and farfel.
  4. Add the sugar, apple, and cinnamon.
  5. Fold in the egg whites.
  6. Pour mixture into the prepared baking dish and dust the top with more cinnamon.
  7. Bake at 375 degrees F (190 degrees C) for 45 minutes.

I love your recipe, but I was wondering if I could use fine semolina or cous cous cos I doubt I'd be able to find matzo farfel over here. Not absolutely sure, but I'm guessing matzo farfel is some kind of grain meal? I'd really like to try this recipe, I'm mad for anything "apple cinnamon" If the suggestions I made are tantamount to culinary sacrilege *grin* then I'd appreciate your suggestions on suitable substitutes. Thanks :)
